Caesar salad: Easier than you ever think!

The Caesar salad is always on the menu, you can see it everywhere, ^^. I got a request asking for the Caesar salad recipe, and I think I need the recipe too. Many people love Caesar salad, and if you can make it at home it will be great.

 I usually feel that, it's hard to make or required many ingredients, and if you start by reading some recipe that tells you to whip whole egg over boiling water (I made it before), you will think that it's hard to do.
So, my mission is, I have to find delicious Caesar salad that's easy to make ^^. I read the recipe and then finally I choose to make the one from:...................... but my first attempt was a bit disappointed. The problem is my first time, the Caesar salad is too sour, and I use too much dressing, so as a word of warning use a little at a time, because the water from the cos lettuce will come out after mixing and you will end up with a bowl of watery salad. 
My second attempt is great, ^^ the taste of the dressing is not too sour and I make the Anchovy paste before adding it into the dressing (I don't like it's bone so I have to press it through a sieve, haha, but if you don't mind just puree it with a back of the spoon before using). 
For the croutons, it's very easy to make, and you can make it before time, just keep them in an airtight container (2-3 days is fine).  
This Caesar salad recipe is very easy to make, the dressing made by beating egg yolks with oil like when you're making the mayonnaise, and it takes very little time to make it. You can make it just before serving or making it and refrigerate it until required but because of raw egg, I'm not suggest you to keep it more than 1-2 days.


 
 Caesar salad
Serves 4
Dressing
2 ..................................... Egg yolks
1tsp ................................ Honey (optional)
5tbsp ............................. Olive oil
1tbsp .............................. Lemon juice
2tsp ................................ Worcester sauce  
1-1½tsp ........................ Anchovy paste 
20g ................................. Grated Parmesan cheese
......................................... Salt and pepper to taste
Crouton
3 ...................................... Garlic cloves
½tsp .............................. Salt
4tbsp ............................. Olive oil
2½c ............................... White bread, cut into ½inch dice
1...................................... Garlic clove, sliced
For serving 
700g .............................. Romaine (or cos lettuce)
........................................ Parmesan cheese, sliced
Beat the yolks and honey (if using) until light, pour the oil slowly into the yolks, follow by the lemon juice and Worcester sauce.
Press the Anchovy through a fine sieve to make anchovy paste, and put the paste into yolk mixture, stir to combine, then add the grated cheese. Season with salt and pepper.


Make the crouton: 
Use the mortar to make the garlic paste, press the paste through a fine sieve and mix with olive oil.
Preheat the oven to 180 °C.
Bake the bread for  8 minutes, then take out of the oven and mix bread and oil together.
Pour the bread back into the baking pan with the sliced garlic and bake for 10 minutes more.


Serving:
Mix the Romaine or cos lettuce with dressing and croutons, serve with cheese, salt and pepper if required.
