Tiramisu de fraises: Strawberry Tiramisu, Fresher side of Tiramisu

Oh, no not again, I know that you will say this, when you see "TIRAMISU" on my post, right? But this time my tiramisu is not the same as always, well, you can see from its color ^^


I feel excited every time that I see any recipe with the name Tiramisu,  There are something special about it, and I know it come from the Mascapone. This soft, sweet and creamy cheese can be used with many kinds of fruit because of its mild flavor. I'm looking forward to make other flavor too but now we're starting with strawberry ^^.
When eating the traditional tiramisu (coffee flavor), it's my comfort food, but with this one the flavor is so refreshing. The strawberry topping is sweet and fragrance, it's so easy to make it because all you have to do is chopping the strawberry and mix with sugar, and let they rest until the sugar melt and merge with the strawberry, they will be syrupy and I like to eat it on its own, hehe.
Deep down, the strawberry compote is different, it has a sweet with tangy hint. 
Because I'm so crazy with my baking, I bake the lady finger by myself (and use only a bit of the batter to make these disks), but the store-bought one will be fine. And if you don't have to make the lady finger, making this dessert can be so easy and you can prepare ahead of time, just spoon the strawberry topping before serving. Eating this, you just push the spoon softly and slowly into the layer, they're waiting for you to enjoy, one, two, three spoon and the next thing that you realize is they're gone.



Tiramisu de fraises: Strawberry Tiramisu
Serves 4

......................................... Lady finger biscuits
Syrup
20g .................................. Simple syrup
1tsp ................................. Crème de fraise
Strawberry compote
120g ................................ Frozen strawberry (1)
30g .................................. Sugar
60g .................................. Frozen strawberry (2)
2tsp.................................. Lemon juice
1tsp ................................. Crème de fraise
2g ..................................... Gelatin sheet
Mascarpone cream
125g ................................. Mascarpone cheese
1 ....................................... Egg yolk
1 ....................................... Egg white
25g .................................. Sugar
2tsp ................................. Crème de fraise
Strawberry topping
130g ................................ Fresh strawberry, cut into small dice
25g .................................. Sugar


If making the lady finger by yourself, pipe it into 7cm disk, and bake follow the same method in Basic Lady Finger.
Make the strawberry compote.
Bloom the gelatin sheet in cold water.
Put strawberry (1) in a pan with sugar, bring to boil until all the sugar dissolve, and strawberry soften.
Put the gelatin sheet in a pan stir to melt the gelatin, and use a blender to blend until smooth. Wait until cool.
Chop the strawberry (2) and mix with the strawberry puree.
Divide into the glasses, refrigerate for 3 hours.
Cut the biscuit into desired size, put the biscuit in the glasses and sprinkle the syrup on top.
Refrigerate until require. Decorate the glasses with strawberry (if you want ^^).

Beat egg yolks and 15 g of the sugar in a large bowl. Add the mascarpone and 1 tsp of Crème de fraise, mixing gently until just combined.
Note from dailydelicious: When mixing cheese and egg, folding by using the spatula is the better way to smoothen the cheese without breaking down the fat.


Beat egg whites with 10g of the sugar in a medium bowl until medium stiff peaks form.
Using a large metal spoon or rubber spatula, gently fold egg whites into the mascarpone mixture.
Divide the Mascarpone cream into glasses. Refrigerate until firm or  at least 2 hours.
Meanwhile mix chopped strawberry with sugar and refrigerate until ready to serve (the strawberry will soften and become succulent)

  5. It's a Sweet strawberry liqueur.
    But if you don't have it uses water with a bit of strawberry extract instead.

  7. Hi, I'm in the middle of making this delicious dessert but I'm using unflavored gelatin from a packet since I don't have the sheets. How much water should I add to the gelatin? Thanks!
