White chocolate Green tea Brownies

Each time that someone sent a request, I really want to give him or she the recipe ^^, but it's not easy because I have to test the recipe first.
Testing and adapting recipe is one of my favourite hobby, it's fun to see how little change in the recipe can turn it into a new kind of sweet (or many times, disaster, haha). This time, it's Green tea brownie, that I'm playing with. I tried some of the recipe before but many of them turn out to be too sweet, and doesn't enough green tea flavour. This time, I didn't go for fudge brownie, as it needs a lot of white chocolate (and it will be too sweet, again), cake brownie is what I want. By melting the chocolate and butter together, then add the other ingredients, the method is the same as other brownie. But the thing that will make your brownie different is the green tea that you use. Lucky that I have one that I bought from Kyoto, it's so green in color and it has right amount of bitterness. If you have a chance to go to Japan, try buying the green tea that they use for cooking or making sweet (the same type that I use), and you will be able to create beautiful and delicious green tea flavour sweet  from your kitchen too ^^.
I choose Macadamia nut for this recipe because the white color of the nut goes well with the green base but you can use other kinds of nut, it depends on you. And try not to over bake the brownie or it will be too crumbly.



White chocolate Green tea Brownies
Make 15 x15 cm

90g ........................... White chocolate
40g ........................... Unsalted butter
30g ........................... Granulated sugar
.................................. Pinch of salt
1 ............................... Egg
40g ........................... Cake flour
8g ............................. Green tea powder
1/2tsp ....................... Baking powder
50g ........................... Macadamia nut, chopped (or other kinds of nut)


Preheat an oven to 180C.
Line 15cm square pan with baking paper.


 Put the white chocolate and butter in a microwavable bowl, melt in the microwave at low power for 1-2 minutes.
Stir until fully melt.


 Pour the sugar and salt into the bowl.


 Stir to combine.
Let the mixture cool for 5 minutes.


 Pour egg into the bowl, stir to combine.


 Sift the flour, baking powder and green tea powder into the bowl.



 Stir to combine.


Pour half of the batter into the prepared pan, sprinkle with half of chopped nuts, pour the rest of the batter into the pan and sprinkle with the rest of the nuts.



Bake for 15-18 minutes or until the top spring back when touch lightly.

  1. ถ้ามีถาดขนาด 7*7 นิ้ว หรือ 8*8 นิ้ว ต้องเพิ่มส่วนผสมยังไงคะ

    1. ถาดขนาด 7*7 จะใช้ส่วนผสม 1.5 เท่าค่ะ
      ส่วนถาดขนาด 8*8 ใช้ส่วนผสม 2 เท่าค่ะ

  2. how much time you need to stir after you put flour, baking powder and green tea powder into the dough? and how the right sped to stir it? thank you..

    1. Just stir until combine, as this one use cake flour the stirring don't effect the texture much.
